Welcome to Embracing Gluten Free!

Hi, I am Katie. I live in Kalamazoo Michigan (yes, there really is a Kalamazoo!) and I am married to my best friend and Mom to 2 adorable red heads. I love photography, gardening and cooking. Cooking. A hobby of mine which changed directions in the Fall of 2010 when I made the switch to being gluten-free.

Let me first start off my saying that I am in no way an expert on gluten intolerance, sensitivity or Celiac disease. I do believe, however, in the power of sharing experiences and connecting others so that we can learn from each other. I feel very fortunate in the way I began my gluten-free journey. I was blessed to have a friend who has Celiac and has been on a gluten-free diet for over 3 years. I was able to spend an entire day with her tasting delicious bread and baked goods, asking questions and learning so much about flours, recipes and tips on grocery shopping. I would have never started out with such ease and success without her guidance.

If you are like me, and have had to make the switch to living gluten-free, you have probably felt overwhelmed at the change at least once. Maybe you felt angry. Maybe you felt sad or dread. I can’t have my favorite cake or pizza anymore? No more of Grandma’s amazing dinner rolls? Believe me, I shed a few tears. But you know what? After the initial overwhelmed feeling, I started to feel peace – and even excitement. I was going to feel better! And we all want to feel better right? Yes, it’s a lot of work to become informed and to know the ins and outs of gluten-free living. But, the benefits are huge if you truly need to be gluten-free. You will eat – and well! Knowing what you can and can’t eat will become easier. It will not always feel like work! You can read my journey of becoming gluten-free here.
